plunge pool concrete

I love the plunge pools we see in Mexico especially in the Yucatan. i want to build one at my place in Kentucky. Last month in California we stayed at a house with an above ground polished concrete pool. im wondering what kind of concrete would work best for this? Any advice would be awesome.
 
For the concrete, shotcrete or gunite are solid options. They're tough, durable, and you can reinforce with rebar for extra strength. If you liked the polished concrete pool finish, that could work too, just make sure you get the right mix. also you should keep the Kentucky weather in mind
